Eggplant Flatbreads
Given the success of my Eggplant Roll, I thought you might like this version of flatbreads made with eggplants following more or less the same procedure. A very simple recipe perfect to prepare if we have little time available or if we want to eat something different. The nice thing is that we can fill them according to our taste with cold cuts and cheeses of choice!!!

Ingredients for the Eggplant Flatbreads:
- 1 eggplant
- 4.2 oz scamorza cheese
- salt
- extra virgin olive oil
Steps
The preparation of the eggplant flatbreads is very simple and quick, watch the video HERE.
First, cut the eggplant into very thin slices. Arrange the slices on the baking tray lined with parchment paper, forming squares. Put the grated scamorza cheese on top. Add a bit of salt,
Drizzle a bit of olive oil and cook at 356°F for about 20-30 minutes. After cooking, flip them and fill as desired with salad, cold cuts, and cheeses!
