Steps
Preparing the eggplant salad with mayonnaise is very simple and quick, watch the video HERE.
First, cook the eggplants at 356°F for about 20 mins, then let them cool in the turned-off oven. Once cooled, peel and finely chop them. Place them in a colander and let them drain.
Finely chop the onion. Add the drained eggplants, a bit of salt.
Add mayonnaise to taste and mix. Add some lemon juice and combine.
