First, cook the eggplants at 356°F for about 20 min, then turn off the oven and let them cool inside with the door closed (this way they will peel easily). Once cooled, clean them and cut them into strips.
Add chopped garlic, oil, a bit of salt, some lemon juice (or vinegar) to taste, chopped parsley, and mix.
Let them soak up the flavors for a few hours (better if stored in the fridge).
