Eggplants in Tomato Sauce
A very simple and vegan recipe because it is made only with eggplants, tomato sauce, and seasonings. Some friends who have a garden gave me these small and very cute eggplants that I immediately liked as soon as I saw them, so given their size, I chose to cook them whole, making just a few incisions around to let them absorb the flavors well! A simple recipe to prepare that we can enjoy any day of the week!

Steps
The preparation of eggplants in tomato sauce is very simple and quick, watch the video HERE.
First, wash and clean the eggplants by cutting off the top. Make small incisions around. In a pan, pour plenty of oil and add the eggplants.
Sauté for a few minutes. Add the garlic and sauté it. Add the cherry tomatoes, a little basil, and cook for a few minutes.
Add the tomato sauce, a little salt, cover, and cook for about 30 minutes, stirring occasionally.
