Prepare the fruit:
Wash all the fruit well. Peel the apple, pear, and kiwi, then dice the apple, pear, pineapple, watermelon, and kiwi. Cut the grapes in half if they are large, leave whole if small. Combine all the chopped fruit and the blackberries in a large bowl.Add the lemon juice to the fruit salad to keep the colors vibrant. Add honey if you desire an extra touch of sweetness. Gently mix to combine everything. Let the fruit salad rest in the refrigerator for at least 30 minutes.
Serve the fruit salad in bowls or cups, add a scoop of ice cream on top of each portion, and garnish with fresh mint leaves.
Enjoy!
🧊 Storage and Tips:
The fruit salad without ice cream can be stored in the refrigerator in an airtight container for up to 2 days.
Do not store the fruit salad mixed with the ice cream, as it will melt and alter the texture and flavor. Add the ice cream just before serving.
You can customize the ice cream flavor based on the season or your tastes: vanilla, coconut, lemon, or yogurt are perfect.
To serve the fruit salad in a more scenic way, try using half-empty watermelon or pineapple shells as natural bowls.
For a vegan or light version, omit the honey and use only well-ripened fruit.
