  • 1 1/2 cups rolled oats
  • 1/4 cup peanut butter
  • 3 tbsp maple syrup (or honey)
  • 3/4 cup mixed nuts (as preferred)

  • Preheat the oven to 350°F in static mode. Line a baking tray with parchment paper.
    In a large bowl, mash the bananas with a fork until you get a puree. It doesn’t need to be perfect; a few small chunks are fine.
    To this banana puree, add the peanut butter and maple syrup. Mix well until you have a homogeneous mixture. If you like, add a pinch of vanilla or a few drops of orange zest for fragrance.
    Add the rolled oats and chopped nuts. Also, add a pinch of salt (it helps bring out the flavors). Mix until everything is well combined.

  • Add the bran and mix well.
    With a spoon or slightly damp hands, take portions of the mixture and form balls. Slightly flatten them to get the typical cookie shape (they won’t spread much during baking).
    Bake for about 12–15 minutes until the edges start to turn golden. The center may still seem soft: it will firm up as the cookies cool.

    Remove from oven and let cool for a few minutes on the tray, then transfer them to a wire rack to prevent moisture from making the cookies soggy.
