Hard-Boiled Egg Salad
A summer salad a bit different from the usual made with hard-boiled eggs, yogurt, pickles, a parsley and lemon sauce, and olives! I confess that I was sorry to have prepared a small portion because it is really good. This salad is perfect for dinner or lunch if we want to opt for a fresh and nutritious meal. A very simple recipe that is prepared in just a few minutes and you can also enrich it with deli meats or cheeses of your choice or eliminate some ingredients, in short, you can customize it to your tastes and preferences!

Ingredients for the hard-boiled egg salad:
- hard-boiled eggs
- plain white yogurt
- pickles
- parsley
- lemon
- extra virgin olive oil
- salt
- olives

First, we chop the hard-boiled eggs. Add the thinly sliced pickles, olives, and yogurt.
In the food processor, we put the previously washed parsley, add some oil, salt, and lemon juice and blend well. Add the mixture obtained to the salad and mix.
