Hazelnut Semifreddo
A very quick dessert to prepare, perfect for summer and more! Fresh and delicious, it can be enjoyed as a dessert after a meal, a snack, or an afternoon treat – in short, it’s perfect for any occasion. You can also use it as a birthday cake instead of the classic sponge cake or mille-feuille! I believe I’ve made semifreddos in all flavors, but I realized I was missing hazelnut, so I got right to work!

Ingredients for the Hazelnut Semifreddo:
- 1 1/16 cup hazelnut drink
- 1/4 cup sugar
- 1/4 cup cornstarch
- 1/4 cup hazelnut paste
- 1/2 cup condensed milk
- 1 cup fresh whipping cream
- hazelnuts (Whole or chopped)
- muesli

Cream preparation:
Mix the cornstarch with the hazelnut drink, bring to the heat to thicken. Add the hazelnut paste. Keep stirring.
Once thickened, transfer it to a container, cover with plastic wrap, and let cool.
Cream preparation:
Add the condensed milk, cream, and whip
Combine the cream with the cold mixture, add some muesli, and blend together.
Put a bit of chopped hazelnuts at the bottom of the mold. Add the cream obtained and level it out. Tap lightly to release air bubbles.
Cover and place in the freezer for several hours. After a few hours, remove the mold and decorate as desired.
