Prepare the fruit:
Wash and thoroughly clean all the fruit. Remove the thinnest possible peel from 2 oranges and 2 lemons and set it aside.
Peel the oranges and lemons, removing as much of the white part as possible, then cut them into pieces, removing the seeds.
Meanwhile, peel the apples and carrots and chop them together with the citrus peel.
Maceration:
Place the carrots, apples, oranges, and lemons together. Add the sugar, mix well, and let it rest in the fridge for a few hours. This step helps bring out all the fruit’s aromas.
Cooking:
After resting, transfer everything to a pot and bring to the heat. Cook over medium heat, stirring occasionally, until the desired consistency is reached. At the end of cooking, add a bit of vanilla, stir, and turn off the heat. Canning:
Pour the hot jam into sterilized jars,
seal tightly and turn upside down to create the vacuum seal. Let cool completely.
