- 1 2/3 cups water
- 2 cups sugar

Thoroughly wash the citron, then cut it into pieces and remove all the seeds. Finely chop the citron and transfer it to a pot.
Add a glass of water and bring to the heat. In another small pot, put water and sugar and cook for a few minutes to obtain a light syrup.
When the water from the citron has partially evaporated, add the syrup and continue cooking on low heat for about 1 hour, stirring occasionally.
Once the desired thickness is reached, immediately pour the hot jam into sterilized jars, seal tightly, and turn them upside down to create a vacuum.
