A fundamental thing for the success of this recipe is the cream, use good quality fresh cream, absolutely do not use vegetable cream.
Heat the cream until it’s about to boil, add the squeezed lemon juice (do not put too much lemon juice because it will change the flavor of the mascarpone). Turn off the heat and transfer it to a container with a sieve inside.
Let it rest in the fridge until the next day. The next day you can use it immediately or put it in a resealable container and keep it in the fridge for 3/4 days. If you want to soften it a bit, work it for a few minutes with an electric mixer.
