Thoroughly clean the strawberries, cut them into pieces and place them in a pot. Add the sugar, lemon juice and a few torn mint leaves. Stir and let rest for about 30 minutes (or even a few hours if you prefer a more intense flavor).
Place over medium heat and cook for about 1 hour, stirring occasionally. During cooking, remove any foam that forms on the surface. When the jam reaches the desired thickness,
immediately pour it into sterilized jars. Close them well and turn the jars upside down to create the vacuum seal.
👉 If you want to store it longer, you can boil the jars for 20 minutes in water.
