Lactose-Free Hazelnut Roll

Ingredients for the Lactose-Free Hazelnut Roll:
pan size 12×16 inches or 14×14 inches
- 4 eggs
- 2.8 oz sugar
- 0.5 cup flour
- 1/3 cup vegetable oil
- 4 tablespoons water (Warm)
- lemon zest
- 2.5 oz hazelnuts
- 7 oz hazelnut cream

Base Preparation:
First, separate the yolks from the whites. Add sugar to the whites and whip. Add a pinch of salt to the yolks, add the warm water, and whisk.
Add the oil and mix. Add flour, some vanilla, lemon zest, and mix.
Gently fold in the whipped egg whites. Pour the batter into a baking tray lined with parchment paper (12×16 inches), level it.
Coarsely chop some hazelnuts and sprinkle them on top. Bake at 350°F for about 15-20 minutes.
As soon as it comes out of the oven, cover it with another sheet of parchment paper, flip it over, and remove the attached parchment paper. Spread the hazelnut cream evenly over the surface.
Roll it up and let it rest and cool well for a few hours. Then cut off the ends.
