Lemon and Mandarin Jam

A homemade jam with seasonal fruit, I’ve paired lemons and mandarins and the result was very satisfying. A very simple recipe to prepare and great for making tarts, cookies, and other sweets, or we can enjoy it simply on bread or to accompany cheeses.

Ingredients

  • 1 lemons (Unwaxed)
  • 2.2 lbs mandarins (Unwaxed)
  • 2.2 lbs sugar
  • 3 1/3 cups water
  • baking soda

Steps

The preparation of the lemon and mandarin jam is very simple, watch the video HERE.

  • Wash the fruit thoroughly with plenty of water and baking soda using the rough side of the sponge or a spatula. Remove the first slice then cut the fruit into very thin slices, I used a mandoline slicer. Place the obtained slices in a container and add cold water. Cover with plastic wrap and refrigerate for about 24 hours.

  • After about 24 hours, change the water and wait another 24 hours. After a total of 48 hours, change the water and boil for about 10-15 minutes.

  • Drain, then add 3 1/3 cups water, the sugar, and cook for about 30 minutes, stirring occasionally.

  • After about 30 minutes, blend it and cook for another 15 minutes. Once the desired thickness is reached, place it in sterilized jars. Close and invert them to create a vacuum seal.

  • If you want to preserve it longer, reboil the jars for about 20 minutes.

  • Enjoy your meal!
