Lemon Mimosa Roll

If you don’t have time to prepare a mimosa cake for March 8th, I suggest a valid alternative that is much simpler ☺️. A super soft roll filled with lemon cream and covered with cubes obtained from the base to achieve the mimosa effect! A simple roll to prepare and delicious to serve at any time of the day! It can also be a sweet little gift for your women!

Ingredients for the Lemon Mimosa Roll:

  • 4 eggs
  • 2/3 cup sugar
  • 1/3 cup vegetable oil
  • 1/2 cup flour
  • 4 tbsp water (Hot)
  • lemon zest
  • vanilla
  • 3/4 cup milk
  • 1 egg
  • 3 tbsp cornstarch
  • 1/4 cup lemon juice
  • lemon zest

Steps

  • Base Preparation:

    First, separate the yolks from the whites. Add the sugar equally. Start beating the egg whites with an electric mixer. Add the hot water over the yolks and start beating.

  • Add the oil, grated lemon zest, vanilla flavor, and flour a little at a time. Mix and then fold in the egg whites.

  • Place the obtained mixture in a 14×14 inch (35×35 cm) mold lined with parchment paper. Sprinkle and level, then bake at 350°F (180°C) for about 20 min. After baking, place a sheet of parchment paper on top, flip it over, and remove the attached parchment paper.

  • Roll it up and let it cool.

    Cream Preparation:

    In a saucepan, put the egg, sugar, starch, and mix. Squeeze the lemon.

  • Add it. Add the milk, lemon peel, and bring to the heat to thicken, stirring constantly to prevent sticking.

  • Once thickened, transfer it into a bowl, cover with plastic wrap, and let it cool.

    Assembly:

    Open the cold roll.

  • cut off the two ends. Put the cream on top, sprinkle, and level. Roll up.

  • place in the fridge for a few hours. Cut the edges into cubes. Cover the roll with a layer of cream or whipped cream, place the obtained cubes on top, and decorate as desired.
