Steps

  • Prepare the base:
Separate the egg yolks from the whites.
Beat the egg whites until stiff peaks form and set aside.
In another bowl, pour the yolks and add the hot water, then beat until light and fluffy.
Gradually add the oil while continuing to mix.

  • Incorporate the flour and mix until you get a smooth and homogeneous batter.
Gently fold in the beaten egg whites, a little at a time, with upward movements to avoid deflating the batter.
Pour the batter into a rectangular pan lined with parchment paper.
Smooth the surface with a spatula

  • Sprinkle some dill.
Bake in a preheated oven at 350°F for about 25 minutes until the base is golden and fluffy.
    Filling the roll:
Once baked, flip the base onto a clean sheet of parchment paper and gently remove the one used during baking.
Spread an even layer of liver pâté over the entire surface (you can use the classic version or a flavored one).

  • Carefully roll up, using the parchment paper to achieve a compact and regular roll.
    Rest and serving:
Wrap the roll in parchment paper and place it in the fridge for at least a couple of hours to firm up well.
When ready to serve, slice it into regular pieces.

  • Enjoy your meal!

Tips and Storage

Tips:
If you want a milder taste, you can replace part of the liver pâté with a cheese mousse or an herb spread.
Fresh dill gives a unique aroma, but you can also use parsley or chives if you prefer a lighter scent.
Slice the roll only when it is completely cold to get perfect and compact slices.

Storage:
Store the roll in the refrigerator for 2 days, wrapped in cling film.
You can prepare it in advance and fill it the next day: it will be even more flavorful!
It is not recommended to freeze it, so as not to alter the base’s soft texture and the pâté’s creaminess.
