Macarons
Who hasn’t eaten macarons at least once in their life?! I don’t think there’s anyone who hasn’t tried or heard of these famous sweets. Two meringue balls made with almond flour then baked at low temperature, filled and paired!!! The truth is they require some time and patience to prepare, but in the end, it’s worth making them. Macarons are perfect anytime of the year, but especially during the holiday season!

Ingredients for the macarons:
- 1/4 cup water
- 1 cup sugar
- 5 tbsp egg whites
- 2 cups almond flour
- 1 3/4 cups powdered sugar
- 5 tbsp egg whites
- food coloring
- 3 1/2 oz white chocolate
- 1/2 cup whipping cream
Steps

First phase:
In a pan, place sugar and water and heat to about 248°F. Meanwhile, start whipping the egg whites and gradually add the syrup. The egg whites should not be overbeaten (watch video).
Second phase:
Sift and dry the almond flour in the oven for a few minutes, then mix it with the sugar. Add the egg whites and mix.
Gently incorporate the whipped egg whites from the first phase, a little at a time. Add some coloring in a bowl, or use multiple colors with separate bowls, and add some of the obtained mixture, gently mixing to avoid deflating the egg whites. Place the mixture in a piping bag with a round, smooth tip and form balls.
Leave some space between them. Lightly tap the tray and bake at 302°F for about 15 minutes.
Cream preparation:
Melt the chocolate together with the boiling cream and mix. Let it cool well.
then put it in a piping bag. Place some cream on the cooled macarons and pair them.
