This year I made mandarin marmalade and from there I got the inspiration and wanted to make a citrus-flavored dove. A simplified recipe that can be made in two stages! I must say that if you like mandarins or like me have made marmalade, try this recipe for Easter. It will certainly be much appreciated as it is not the classic dove but is a bit more special!

Ingredients for the mandarin dove:

  • 9 oz all-purpose flour
  • cup water (Orange-scented or juice)
  • oz fresh yeast
  • 3 oz sugar
  • vanilla
  • lemon zest
  • tsp salt
  • 1.8 oz mandarin marmalade
  • 2.8 oz all-purpose flour
  • 3 egg yolks
  • 3.5 oz butter
  • 1.8 raisins (Candied as desired)
  • 3 tbsp brown sugar
  • 3.5 oz almonds (Hazelnuts)
  • ½ tbsp fine cornmeal
  • ½ tbsp cornstarch
  • 2.1 oz egg whites
  • sugar crystals
  • almonds (Whole)

Steps

For the preparation of the mandarin dove watch the video HERE.

  • First phase:

    Put the flour, sugar, yeast, a bit of vanilla, lemon zest and start the stand mixer. Add the water or orange juice.

  • Add a pinch of salt and knead until the ingredients are well combined. Once ready, transfer it to a container, cover and put in the fridge for about half an hour.

  • Second phase:

    After about 30 minutes, put the dough back into the stand mixer, add the marmalade and start kneading again. Add the flour and continue to knead until the dough detaches from the sides.

  • At this point, add the egg yolks one by one. Occasionally lower the dough from the hook and the sides. Continue to knead until a ball is formed again. Add the cold butter a little at a time and continue to knead until the dough is sufficiently elastic (watch the video HERE).

  • Finally, add the raisins or candied fruit as desired and mix well.

  • Form a ball and place it in a container, cover, and let it rise for about 1.5 hours. After about 1.5 hours, take the dough

  • divide it in half, then split one piece in half again. Lengthen the first piece and place it in the central dove mold, place the other two pieces to form the wings.

  • Let it rise until it reaches about an inch from the edge.

    Cover preparation:

    Put the sugar, almonds/hazelnuts, cornstarch, cornmeal and blend.

  • Add the obtained mix to the egg whites and mix.

    When the dove has reached about an inch from the edge, put the prepared glaze on top. Add a few whole almonds on top,

  • Add a bit of sugar crystals and mandarin zest. Bake at 350°F for about 50 minutes.

  • Enjoy your meal
