Mimosa Cake with Cream and Chocolate
A delicious mimosa cake made with two creams, a vanilla custard and a chocolate custard. Two flavors that always please everyone! If you are undecided on which mimosa to prepare for March 8th, try this version.

Ingredients for the Mimosa Cake with Cream and Chocolate:
(8-9 inch mold)
- 5 eggs
- 7 oz sugar
- 1 cup flour
- 1/3 cup potato starch
- Half packet baking powder
- 2 eggs
- 5.5 oz sugar
- 2 cups milk
- 1/3 cup cornstarch
- lemon zest
- 1 egg
- 3 oz sugar
- 1 cup milk
- 3.5 oz chocolate
- 2 tbsps cornstarch

Preparation of Sponge Cake:
Beat the eggs with the sugar until a creamy mixture is obtained (it should triple in volume). Add the baking powder and flour a little at a time and reduce the speed to minimum. Pour the mixture into the mold and bake at 356°F for about 50 minutes.
Preparation of Custard:
In a saucepan, place the eggs, sugar, and cornstarch and mix. Add the milk while stirring. Add the lemon zest
bring to a boil to thicken, stirring occasionally. Once thickened, transfer it to a container, cover with plastic wrap, and let cool.
Preparation of Chocolate Cream:
In a saucepan, place the egg, sugar, and cornstarch and mix. Add the milk while stirring. Bring to a boil to thicken,
stirring to prevent sticking. Once thickened, turn off the heat and add the chocolate, then mix. Transfer it to a container,
cover, and let cool.
Assembly:
Once the sponge cake is baked and cooled, remove the crust from the entire surface, then cut into three equal discs. Use a cake ring to make slightly smaller discs.
Dice the leftover sponge cake. Place the first sponge cake disc and moisten it. Add a layer of custard.
Place the second disc, moisten it. Add a layer of chocolate cream. Place the third disc, moisten it, and cover the entire surface with custard.
Add the diced sponge cake on top.
