Ingredients for mimosa roll with cream and berries:

  • 7 oz berries (Fresh or frozen)
  • 1/4 cup sugar
  • 1 cup milk
  • 1/2 cup sugar
  • 3 tbsp egg yolks
  • lemon zest
  • 2 tbsp cornstarch
  • 2 tbsp rice starch
  • salt
  • 1 cup whipped cream
  • 4 eggs
  • 1/3 cup sugar
  • 1/2 cup flour
  • 1/3 cup vegetable oil
  • 4 tbsp water (Hot)
  • vanilla
  • lemon zest
  • salt

  • Berry preparation:

    In a saucepan, place the berries and sugar, and cook for about 10 minutes. Turn off and let cool well.

    Cream preparation:

    In a bowl, place the egg yolks.

  • Add the rice starch, cornstarch, and sugar and mix. Add 1/2 cup of cold milk and blend.

  • Meanwhile, heat the remaining milk with lemon peel inside, then add it while stirring. Put in the microwave until it thickens, taking it out every minute to stir.

  • It will take 4/5 mins, depending on your microwave’s power. Once thickened, remove the peel, cover with plastic wrap, and put in the freezer for an hour to cool.

  • Then add the whipped cream and mix.

    Roll preparation:

    First, separate the yolks and egg whites. Add sugar to the egg whites and whip.

  • Add a pinch of salt to the yolks, add hot water and whip. Add the oil and mix. Add the flour

  • some vanilla, lemon zest, and mix. Gently fold in the whipped egg whites.

  • Place the obtained mixture in a lined baking mold (12×16 inches), level it. Bake at 350°F for about 15 minutes.

  • As soon as you take it out of the oven, place a sheet of parchment paper on top and flip it over. Detach the parchment paper. Trim the edges and moisten with water, sugar, and flavors as desired.

  • Place about 3/4 of the prepared cream on top, spread and level it. Add the berries and roll up.

  • Put it in the fridge for a few hours. After a few hours, cover it with the remaining cream. Cut the trimmings into cubes.
