Mimosa Roll with Nutella

A soft roll filled with a delicious layer of Nutella and covered with diced sponge cake to create the mimosa effect. Ingredients for the Mimosa Roll with Nutella:

Pan size 14×14 inches

  • 4 eggs
  • 2/3 cup sugar
  • 1/3 cup vegetable oil
  • 2/3 cup flour
  • 4 tbsp water (Hot)
  • lemon zest
  • vanilla
  • to taste Nutella®

Steps

  • Base preparation:

    First, separate the yolks from the whites. Add the sugar divided equally. Start whisking the egg whites using an electric mixer. Add the hot water over the yolks and start whisking.

  • Add the oil, grated lemon zest, vanilla flavor, and flour little by little. Mix well, then incorporate the egg whites gradually.

  • Put the mixture in the 14×14 inches pan lined with parchment paper. Spread and level, then bake at 356°F for about 20 minutes. After baking, place a sheet of parchment paper on top, flip it over and remove the attached parchment paper.

  • Cut the edges, then cut 5/6 strips of the same size. Cover all the strips with a layer of Nutella. Roll the first strip onto itself.

  • Place it in the center of the plate. Place the other strips around to form the roll. Dice the edge trimmings. Cover the roll’s edge with Nutella.

  • Place the diced pieces. Add some hazelnut crumbs on top and decorate as desired.
