Another masterpiece for International Women’s Day, March 8th. A soft and creamy roll this time with orange flavor, with a final result that pleasantly surprised me. Ingredients for the mimosa roll with orange:

  • 4 eggs
  • 3/8 cup sugar
  • 1/3 cup vegetable oil
  • 1/2 cup flour
  • 4 tbsp water (Hot)
  • lemon zest
  • vanilla
  • 1 cup oranges (Cleaned)
  • 1/2 cup sugar
  • 1 cup whipped cream
  • 1/2 cup mascarpone
  • 5 g gelatin leaves
  • Half lemon

Steps

  • Base preparation: First, separate the yolks from the whites. Add sugar in equal parts. Start whipping the whites using an electric mixer. Add hot water over the yolks and start whipping.

  • Add the oil, grated lemon zest, vanilla flavor, and flour a little at a time. Mix and then incorporate the whites.

  • Place the mixture obtained in a 14×14 inch mold lined with parchment paper. Sprinkle and level then bake at 350°F for about 20 min. After baking, place a sheet of parchment paper on top, flip it over, and remove the attached parchment paper.

  • Roll and let cool.

    Cream preparation:

    First, we need to clean and cut the oranges and remove any seeds. Add the sugar, lemon juice

  • cook for about 10 min stirring occasionally. Turn off and add the previously hydrated and then squeezed gelatin. Blend lightly with an immersion blender and let cool slightly then mix the cream obtained with the mascarpone.

  • Add the whipped cream and mix.

    Assembly:

    Open the cold roll and cut the ends. Spread about 3/4 of the prepared cream on top, sprinkle and level it.

  • Roll up and refrigerate for a few hours. After a few hours, cover the roll with the remaining cream.

  • Cut the ends into cubes and place the cubes on top. Decorate as you like.

  • Enjoy your meal!
