  • Let’s prepare the base:

    In a bowl, whisk the eggs with the sugar until pale and fluffy. Add the oil,

  • Add the milk, flour and a little vanilla and mix well.

  • Pour the batter into the tartlet molds. Put the leftover batter into a pan — we’ll use it for the final mimosa decoration. Bake at 356°F for about 20 minutes. Let cool completely.

  • Prepare the custard:

    In a small saucepan put the egg, sugar, cornstarch, lemon zest and vanilla

  • add the milk and bring to the heat, stirring constantly until thickened. At the end of cooking, add the butter

  • and mix. Transfer the custard to a bowl, cover with plastic wrap directly on the surface and let cool.

  • Filling and decoration:

    Place the cold tartlets on a plate. Fill them with the custard using a piping bag.

  • Decorate with fruit as you like. Cut the prepared sponge cake into cubes and distribute them over the tartlets to create the classic mimosa effect.
