This mimosa tiramisu was made for March 8 and is an easy, quick version that truly suits everyone:

And there’s a special reason: I made it to fulfill the request of my friend Lara, who has followed me for many years 🥰

Perfect as a dessert for Women’s Day, but also great for birthdays, special dinners or whenever you want to bring something pretty and delicious to the table without complicating your life.

Ingredients

  • 4 cups whipping cream (about 33.8 fl oz / 1 L)
  • 1 cup mascarpone (about 9 oz / 250 g)
  • 1 cup granulated sugar (about 200 g)
  • 7 oz ladyfingers (savoiardi) (about 20–24 pieces, 200 g)
  • as needed coffee
  • unsweetened cocoa powder
  • 2 oz sponge cake (Or ready-made plumcake / yogurt cake)

  • Let’s prepare the cream
    Place the mascarpone and sugar in a bowl and beat with a mixer until you get a smooth cream.
    Add the cold whipping cream and whip everything together until you obtain a thick, velvety cream.

  • Assembly:

    Place a cake ring on a serving plate to give the dessert a neat shape.
    I used a square one, but a round one is perfectly fine.
    Arrange a first layer of ladyfingers soaked in sweetened coffee on the bottom.
    Using a piping bag, pipe a layer of cream on top to form many small rosettes.

  • Dust generously with unsweetened cocoa powder, then add another layer of soaked ladyfingers.
    Cover again with cream,

  • dust again with cocoa.
    Transfer to the fridge for a few hours to set well.
    Once rested, gently remove the cake ring.
    Decorate the surface with cubes of sponge cake to create the mimosa effect.
    If you don’t have sponge cake, no problem: you can comfortably use a ready-made supermarket plumcake.

  • Decorate as you like… and here is your mimosa tiramisu ready to serve 🌼💛

It’s better prepared in advance: it tastes even better the next day!

If you want to make it even more special, you can add:
white chocolate flakes
or strawberries or raspberries for a spring version

Keep the mimosa tiramisu in the fridge, covered with plastic wrap or under a cake dome, for 2–3 days.
It’s even better the next day because it firms up and the flavors meld.
Avoid leaving it at room temperature for too long, especially in warm environments.
Freezing is not recommended, as the cream may lose its creaminess once thawed.
