Mini Abruzzo Pan-rozzi

A traditional Abruzzo Christmas dessert made in a dome-shaped mold with almonds, amaretto liqueur, and semolina, covered with a layer of dark chocolate. This year, for a change, I chose to make individual portions so that they are much more convenient to serve since they are already portioned! I must tell you they are truly delicious and will definitely be greatly appreciated by your loved ones!

Ingredients for Mini Abruzzo Pan-rozzi:

  • 4 eggs
  • 3/4 cup almonds
  • 1/2 cup semolina
  • 2/3 cup sugar
  • 1/3 cup butter
  • lemon zest
  • orange zest
  • 1 tbsp amaretto (liqueur)
  • 7 oz dark chocolate

Steps

The preparation of Mini Abruzzo Pan-rozzi is very simple, watch the video HERE.

  • First, separate the egg whites from the yolks. Add the sugar to the egg whites and beat them. Add the grated lemon zest and orange zest to the yolks

  • and beat. Add the melted butter, finely chopped almonds, and mix. Add the liqueur,

  • Add the semolina and mix. Gradually fold in the beaten egg whites a little at a time. Pour the mixture into the sphere-shaped molds. Bake at 350°F for about 20 minutes.

  • After baking, let them cool well, then glaze them with melted chocolate. Wait about an hour for the chocolate to solidify.
