Mini Diplomat Cakes

A great classic Italian that is always present in pastry shops, two layers of puff pastry with two layers of custard and in between sponge cake soaked with alchermes, a delight! A very simple recipe to prepare but the difficulty in this case lies in the cutting, I showed you my method in the video to cut the diplomat more easily!

Ingredients for the mini diplomat cakes:

  • 8 eggs
  • 1 1/2 cups sugar
  • 2 1/8 cups all-purpose flour
  • Half packet baking powder for desserts
  • 2 sheets puff pastry (Rectangular)
  • as needed custard
  • as needed alchermes
  • sugar syrup
  • powdered sugar

Steps

  • Preparation of Sponge Cake:

    Put the eggs, sugar, and start to whisk until you get a light and creamy mixture. Lower the speed and add the baking powder little by little.

  • Add the sifted flour. Put the obtained mixture in a pan lined with parchment paper, level it, and bake for about 30/40 min.

  • For the soaking, prepare one part alchermes and three parts syrup.

    Once the sponge cake is cooked and cooled, level it by cutting the crust, the bottom part, and the edges.

  • Place a piece of cooked puff pastry on top and cut the shape.

    Assembly:

    Place the first piece of puff pastry and cover it with a layer of custard, cover the entire pastry, and level.

  • Place the sponge cake on top and soak it. Add another layer of custard, and level it.

  • Place the other piece of puff pastry on top. Add weight on top, then refrigerate until the next day. The next day, first cut two edges.

  • then make the cuts on the surface of the first puff pastry only, then go over the same cuts all the way down. Dust abundantly with powdered sugar.

  • cut the other strips to get the pieces.
