Modern Tiramisu Cake
I can tell you that tiramisu has always been one of my favorite desserts, so for the Christmas holidays, tiramisu is a must. However, this year I chose to make a different version: I made a cake with a crunchy chocolate base, then I made a classic tiramisu cream, added gelatin to keep it firm, and of course, I also added ladyfingers soaked in coffee because what kind of tiramisu would it be otherwise 😂. Ingredients for the Modern Tiramisu Cake:
- 1.8 oz dark chocolate
- 1.8 oz hazelnut cream
- 4.4 oz sugar
- 0.3 cup water
- 3.5 oz egg yolks
- 8.8 oz mascarpone cheese
- 0.2 oz sheet gelatin (3 sheets)
- 1.1 cup whipping cream
- 2.8 oz ladyfingers
- unsweetened cocoa powder
- coffee
- custard
- unsweetened cocoa powder
Steps

Preparation of the crunchy base:
Combine the melted chocolate with the hazelnut cream and put the mixture in the mold lined with acetate sheet. Spread over the entire base and level. Let it harden.
Preparation of the cream:
Put the water and sugar on the heat and bring to a boil, it must reach 250°F. Once it reaches the temperature, pour it over the egg yolks and whip.
Squeeze the gelatine previously soaked in cold water and put it in a little boiling coffee. Stir to dissolve the gelatin well and add it to the whipped yolks. Add the mascarpone.
Add the semi-whipped cream. Whip for a few minutes until you get a thick and homogeneous cream. Place about half of the cream obtained over the hardened base. Add a layer of coffee-soaked ladyfingers and cover with the remaining cream.
Level and refrigerate for a few hours!
