Wash the oranges very well, then slice them very thinly, preferably with a mandolin. Put the slices in a bowl, cover them with water
cover with water and refrigerate for 12 hours. After the time has passed, change the water and repeat the process 2-3 times. This step is essential to remove the bitterness from the oranges. At this point, drain the oranges well and transfer them to a large pot.
Add: sugar, lemon juice, and water. Bring to the heat and cook for about 30-40 minutes, stirring occasionally. Blend with an immersion blender until the desired consistency is reached.
Add the vanilla flavor and continue cooking for a few more minutes. Pour the still hot marmalade into sterilized jars, seal well and turn upside down to create a vacuum seal. Allow to cool completely.
