Pan-fried Potato Flatbreads
A delicious recipe that is very simple to prepare and great for every day of the week! A quick dough made with boiled potatoes without using yeast and cooked in just a few minutes in a pan. These flatbreads are delicious, easy, quick, and perfect as an appetizer, aperitif, snack, etc. I chose mozzarella as a filling, but you can easily add deli meats as you like!

Ingredients for Pan-fried Potato Flatbreads:
- 1.1 lbs potatoes, peeled, cooked, boiled
- 1.25 cups flour
- 3.5 oz butter
- 7 oz mozzarella
- extra virgin olive oil
- salt
Steps

First, mash the boiled potatoes. Add the butter, a bit of salt, and mix. Add the flour, blend and knead quickly.
If needed, we can add a bit more flour, we need to get a homogeneous, non-sticky dough. Take a bit of dough at a time and roll it out slightly.
Place a piece of mozzarella in the center, close the edges and press lightly. They need to be closed well to avoid the mozzarella from leaking out during cooking. Proceed like this with all.
Cook the obtained flatbreads in a pan with a bit of oil, turning them on both sides.
