Pasta with Zucchini Pesto
A fresh first course made with a zucchini pesto with garlic, basil, and pine nuts, a delicious combination that was very much appreciated in my house! A simple recipe that we can prepare any day of the week and we can also take it out for lunch because it is good both hot and cold!

Ingredients for pasta with zucchini pesto:
- 4 zucchini
- salt
- 1 garlic
- Half onion
- 6 leaves basil
- 1.5 oz pine nuts
- 1.5 oz parmesan
- extra virgin olive oil
- 9 oz pasta
- nduja (Optional)
Steps
The preparation of pasta with zucchini pesto is very simple, watch the video HERE.
First, wash, clean and cut the zucchini. In a pan, put some oil, garlic, and chopped onion and sauté.
Add the chopped zucchini and cook for about 10 minutes. Put them in a blender, add the pine nuts,
Add the basil, parmesan, a little salt, and oil (about 2/3 tablespoons) and blend.
Meanwhile, cook the pasta, drain it, and put it on top of the prepared sauce. Mix well then serve on plates.
Put a little grated pecorino on top and some nduja pieces (optional).
