The pastiera is a classic Neapolitan dessert that has undergone many variations over the years, so today we find it in many versions. I have also made Chocolate Pastiera, Rice Pastiera, pastiera without eggs and candied fruit, Pastiera cheesecake and many others. This time, I wanted to try the version with custard cream in the filling, and I must say that I liked it a lot!

Ingredients for pastiera with custard cream:

  • 1 1/4 cups milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 2 egg yolks
  • lemon zest
  • vanilla
  • 1/2 cup ricotta cheese
  • 9 oz cooked wheat
  • 1/2 cup sugar
  • orange peel
  • candied orange
  • flavors (To taste)
  • 2 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 eggs
  • 6 tbsps lard
  • lemon zest

Steps

  • Prepare the cream:

    In a bowl, mix the sugar and cornstarch. Add the egg yolks, a bit of vanilla, and the milk with lemon peel, a little at a time. Thicken it by putting it in the microwave (or you can also use the stove).

  • Take it out every minute to stir it. Once thickened, cover with plastic wrap and let cool. Once cooled, remove the lemon peel and soften a little by mixing. Add the drained ricotta.

  • Add the cooked wheat and flavors to taste. Add some orange peels, the sugar, and mix. Add candied fruits to taste.

  • Prepare the base:

    Put the flour, sugar, lemon zest, eggs, and lard and knead. You need to get a homogeneous mixture.

  • Wrap it in plastic wrap and put it in the fridge for about 30 min. After about 30 min, take 3/4 of the dough and roll it out on parchment paper using a little flour if necessary.

  • Put it in the greased pan, remove the parchment paper and arrange. Cut the edge precisely,

  • make some holes with a fork on the bottom. Add the prepared cream and level it. Roll out the remaining dough.

  • Cut strips. Place them on top, overlapping. Bake at 350°F for about an hour. Use the leftovers to make themed decorations as desired.
