Pear and chocolate cheesecake

Ingredients for the pear and chocolate cheesecake:
8-inch pan
- 2 cups pears
- 5 tbsps sugar
- 2 cups cookies
- 1/2 cup butter
- 7 oz cream cheese
- 1 cup ricotta
- 2 1/2 tsps gelatin sheets (6 sheets)
- 3/4 cup heavy cream
- 1/2 cup sugar
- vanilla
- 1/3 cup chocolate chips
- 3 1/2 oz chocolate
- 1/2 cup heavy cream

Pear preparation:
In a saucepan, put the pear pieces, sugar, and cook for about 10 minutes, stirring occasionally. Turn off the heat and let them cool.
Base preparation:
In a bowl, combine the crushed cookies with melted butter and mix well. Place them in the baking pan lined with parchment paper on the bottom and compact. For a more precise result, you can put an acetate sheet on the edge.
Put in the fridge for about 30 minutes.
Cream preparation:
First, soak the gelatin in cold water. In a bowl, put the cream cheese, sugar, and mix. Add the cold pears.
Mix well. Add the ricotta and mix. Add the cream and mix everything well. Finally, add the chocolate chips.
Melt the gelatin on the stove with a little water, let cool slightly, then add it and mix well. Put the obtained mixture over the cookie base.
Level it and place it in the fridge for at least 2 hours.
Glaze preparation:
Combine the chocolate with the hot cream and mix to melt the chocolate well. Place it over the cheesecake
Spread and put back in the fridge for another 2 hours. After resting, remove the pan and decorate as desired.
