Peppers and Tomatoes
During the summer, the smell of roasted peppers can be sensed on every street corner. I think peppers are one of the most appreciated side dishes. Today I propose a recipe I love and that my mom always used to make for me! A very simple recipe made with very few ingredients like peppers, tomatoes, onion, garlic, and a bit of oil. It’s the perfect dish because it’s delicious cold and it’s vegan!

Ingredients for Peppers and Tomatoes:
- 4 peppers
- 4 tomatoes
- onion
- garlic
- extra virgin olive oil
Steps
The preparation of peppers and tomatoes is very simple and quick. Watch the video HERE.
First, cook the peppers in an air fryer or in the oven at 356°F for about 30 minutes. After about 20 minutes, turn them and continue cooking. Once ready, let them cool in the air fryer, then clean them by removing the seeds
cut into strips. In a pan, sauté the onion and garlic with a bit of oil. Add the tomatoes cut into pieces
Add the peppers. Season with salt and spices to taste and cook for about 30/40 minutes, stirring occasionally.
