Polenta Cups with Cotechino

Ingredients for the Polenta and Cotechino Cups:
- 1 qt water
- salt
- 8.8 oz cornmeal (Instant)
- extra virgin olive oil
- breadcrumbs
- cotechino
- cheese (To taste)
Steps
The preparation of the polenta and cotechino cups is very simple, watch the video HERE.
First, bring the water to a boil, add salt, then add the cornmeal while stirring. Cook for a few minutes while stirring (check your package for cooking times and follow the instructions provided).
Once ready, brush the molds with olive oil and sprinkle with breadcrumbs. Immediately fill with the polenta
leave the center free. Meanwhile, cook the cotechino and dice it. Put some cotechino into the recreated space.
Add some cheese to taste and cover with the polenta. Bake at 356°F for about 15 minutes, then remove the molds and decorate as desired.
