Polish Babka Panettone

A panettone full of chocolate, very soft and delicious that rises in the fridge for 24 hours. Christmas is approaching, and to get into the spirit of the holiday season, we need to prepare typical sweet and savory treats. I always like to experiment with new recipes that are also part of other countries, and this year I decided to try the Polish panettone “Babka”. I must say it is spectacular 🤩 and resembles a bit the Romanian panettone, I recommend trying it because it’s worth it!

Ingredients for the Polish Babka Panettone:

  • 4 1/4 cups all-purpose flour
  • 3 eggs
  • 2/3 cup sugar
  • 2/3 cup butter
  • 1 container plain yogurt
  • salt
  • 1/2 oz fresh yeast
  • orange zest
  • lemon zest
  • 5 oz dark chocolate
  • 2/3 cup butter
  • 1 cup walnuts
  • 1/2 cup sugar
  • 5 tbsp unsweetened cocoa powder
  • rum flavoring
  • 1/2 cup sugar
  • 1/4 cup water

  • In a bowl, we put the eggs, sugar, yogurt, a bit of orange and lemon zest, a pinch of salt, the crumbled yeast, and mix.

  • Add the flour and knead until a homogeneous mixture is obtained. Add room temperature butter little by little and let it incorporate. Cover the dough and place it in the fridge for about 24 hours.

  • Cream preparation:

    In a bowl, put the melted chocolate, butter, and sugar and mix. Add a bit of rum flavoring or rum if preferred, the chopped walnuts, and mix.

  • Assembly:

    After about 24 hours, take the dough from the fridge and roll it out on a sheet of parchment paper (roughly the size of the paper). Place the filling on top and spread it over the entire surface, leaving one centimeter from the edge empty.

  • Roll it up and lightly flour the obtained roll. Cut it in half and then overlap the two pieces.

  • Twist them together. Place in a loaf pan and let rise for about two hours in a warm place. Then bake at 350°F for about 50/60 minutes.

  • Syrup preparation:

    In a small saucepan, put the sugar and water, and bring to the heat to dissolve the sugar. After baking, brush with the prepared syrup!
