Pork Tenderloin Roll with Omelette Heart
A perfect roll for the holiday season, especially for Christmas lunch or New Year’s Eve dinner! This time I wanted to make a different roll that we can serve both as an appetizer and as a main course! I used pork tenderloin as the base and then chose to fill it with a vegetable omelette and wrap it in bacon. I tell you, it turned out truly DIVINE! Ingredients for Pork Tenderloin Roll with Omelette Heart:
- 1 pork tenderloin
- 3 eggs
- bell peppers
- bacon
- pepper
- paprika
- extra virgin olive oil
- garlic
- onion
- parmesan cheese
Steps
The preparation of the pork tenderloin roll with omelette heart is very simple, watch the video HERE.
First, in a pan, put the sliced bell peppers, a bit of oil, garlic, onion, and sauté. Meanwhile, in a bowl, put the eggs,
Add a bit of pepper, salt, parmesan cheese, and beat with a fork. Pour the obtained mix over the sauté. Cook for a few minutes
then flip the omelette using a plate or the lid. Cook for another 1/2 min. Take the tenderloin and open it, then pound it to create the base for our roll.
Sprinkle a bit of salt, garlic, pepper, and paprika on top.
Cut the omelette into strips and place them on top. Roll it up tightly. Lay out the bacon slices
over the roll. Wrap the slices to encase the roll. Wrap it in parchment paper and bake at 355°F for about 30 min, then uncover and bake for another 15/20 min or so.
