Ingredients for the potato balls with cooked ham:

  • 1 lb potatoes
  • 2.8 oz cooked ham
  • 0.7 oz corn starch (or potato starch)
  • 1.4 oz Parmesan cheese
  • 1 tbsp extra virgin olive oil
  • as needed breadcrumbs
  • salt
  • pepper
  • vegetable oil (for frying)

  • Boil the potatoes
    Cook the potatoes in cold salted water for about 20-25 minutes, until soft. Drain and mash them well.
    Prepare the dough
    In a bowl, combine the mashed potatoes, chopped cooked ham, corn starch, Parmesan cheese, olive oil, salt, pepper, and nutmeg. Mix well until you get a compact but soft dough.

  • Form the balls
    Take small portions of dough and form balls. Roll them in breadcrumbs to coat them evenly.

  • Fry
    Heat plenty of vegetable oil to 340°F and fry a few balls at a time for about 2-3 minutes, until golden and crispy. Drain them on absorbent paper.
    Alternatively, for a lighter version, you can also cook them in an air fryer.

    Serve
    Serve them hot, as an appetizer, aperitif, or tasty side dish.
