Cute little pastries shaped like fans with simple puff pastry and plenty of granulated sugar. Fans can be easily found in any pastry shop and throughout the year. They are very tasty and keep for a long time since they are part of the dry biscuit category. I made the puff pastry at home (it’s very simple, not at all complicated but it does require some resting time between the various steps) but if you want to speed up, you can buy ready-made puff pastry (you can find it easily in all supermarkets) and then prepare them the same way.

Ingredients for the puff pastry fans:

  • 3/4 cup all-purpose flour
  • 3/4 cup cake flour
  • salt
  • 7 oz vegetable margarine
  • 6 tbsp water
  • sugar

Steps

For the preparation of puff pastry fans watch the video HERE.

  • We put the flours, a little salt, the water and knead.

  • We roll out the dough obtained then put the margarine in several pieces. Cover with the dough and roll out to form the first fold.

  • Wrap in parchment paper and refrigerate for about an hour. After about an hour, take the dough and roll again and make 2 folds of 4. Wrap in parchment paper and refrigerate until the next day.

  • The following day… roll out and make another 2 folds of 4. Divide in half and roll out the first piece with a little help from some flour.

  • Form a rectangle (optionally cut the edges to be more precise). Cover with granulated sugar then make 3 folds on each side (watch video). Press down.

  • Add a bit more sugar on top and close. A little more sugar then cut into strips.

  • Place the obtained pieces on a baking sheet with parchment paper a little apart from each other. Bake at 390°F for about 20 min.

  • Enjoy your meal!
