Pumpkin, Chickpea, and Farro Soup!

Ingredients for Pumpkin, Chickpea, and Farro Soup:
- Half onion
- garlic
- 1 celery stalk
- 1 carrot
- extra virgin olive oil
- 1 can canned chickpeas
- 1/2 cup farro
- rosemary
- 1/2 cup tomato puree
Steps
The preparation of pumpkin, chickpea, and farro soup is very simple and quick, watch the video HERE.
First, clean, wash, and chop the garlic and onion, celery, and carrot. Sauté them with some oil. Add the cleaned and chopped pumpkin.
Add the chickpeas with their liquid, the tomato puree, and plenty of water. Add salt.
Cook for about 30 minutes, stirring occasionally. Add the farro and cook for another 15 minutes.
(Check your package for the indicated cooking time). Finally, add some rosemary and serve.
