Quick Cookies and Mascarpone Truffles
These are single-serving treats, cute, very simple and quick to make, and perfect to serve on any occasion. They are also very handy for sweet buffets as they are single servings, making them ideal. For the coating, I chose to make two versions: one with coconut and one with cocoa. For the filling, I chose a mix of hazelnut and cocoa cream, but you can also use other types of spreads or jams if you like.

Ingredients for quick cookies and mascarpone truffles:
- 2 cups cookies
- 3 tbsp sugar
- 1 oz unsweetened cocoa powder (+to taste)
- 3 1/2 tbsp hazelnut spread
- 5 1/4 oz mascarpone cheese
- grated coconut (desiccated)
Steps

Start by finely grinding the cookies (I used a food processor). Transfer them to a large bowl, then add the mascarpone, sugar, hazelnut spread, and cocoa.
Mix all the ingredients well (I did it with my hands). Take a bit of the mixture at a time and shape it with your hands into balls. Roll the balls in the grated coconut or cocoa and place them in paper cups. Continue until all the mixture is used up!
