Quince Jam
A jam that is not usually made since it is very particular. The quince is a fruit that is very tart and woody, so it’s rarely eaten as is, but made into jam, it has a divine taste, I love it!!! I enjoy eating it on bread, using it in desserts, or serving it with cheese, in short, you can consume it however you like best.

Ingredients for quince jam:
- 2.2 lbs quinces
- 1.5 cups sugar
- 1.25 cups water
- cinnamon stick
- vanilla
- lemon
Steps
The preparation of the quince jam is very simple and quick, watch the video HERE.
First, we need to wash the quinces thoroughly using a rough sponge to remove the fuzz. We cut and clean them by removing the core and any bruises or damaged parts (my quinces were organic, so they were quite damaged). We put them in cold water with lemon to prevent them from browning.
Once cleaned, we blanch them for about 10 minutes in clean water. We add the juice of half a lemon. We drain them but save the cooking water. We put them back on the stove,
add the sugar, 1.25 cups of cooking water, a bit of cinnamon, vanilla, and cook for about 40 minutes, stirring occasionally.
Finally, we remove the cinnamon and blend the mixture. Once the desired consistency is reached, we place it in previously sterilized jars. We seal them well and turn them upside down to create a vacuum seal.
If you want to store it for a longer period, re-boil the jars for about 20 minutes.
