An ideal cake for celebrating an important event, a birthday, or an anniversary. A large cake, easy to make, suitable for about 25/30 people. A base made with sponge cake then soaked and filled with Chantilly cream!!!

Ingredients for the Rectangular Birthday Cake:

  • 7 eggs
  • 1.5 cups flour
  • 1 cup sugar
  • Half packet baking powder
  • salt
  • 2 cups milk
  • 2 cups heavy cream
  • 2/3 cup sugar
  • vanilla
  • 1/3 cup cornstarch
  • 2 eggs
  • lemon zest

  • Preparing the sponge cake:

    In a bowl, place the eggs, sugar, and whisk for about 10 minutes until a creamy, light mixture is obtained. Gradually add the sifted flour and mix well. Finally, add the baking powder and a pinch of salt and combine.

  • Place the mixture into the mold lined with parchment paper, lightly tap and bake at 350°F for about 40 min.

  • After baking, turn it upside down, remove the parchment paper attached during cooking and let it cool well (you can also prepare it the day before).

    Preparing the cream:

    In a saucepan, place the eggs, sugar, cornstarch,

  • Add a bit of vanilla and mix. Add the milk while stirring and the lemon peel.

  • Bring to a boil to thicken while stirring constantly. Remove the peel.

  • Once thickened, turn off the heat, cover with plastic wrap, and let it cool. Once cold, remove the wrap, place it in a bowl, add the cream

  • whip and combine with a mixer until you get a thick and homogeneous cream.

    Assembly:

    Take the well-cooled sponge cake and trim the edges, then divide it into two equal parts. Place the first piece

  • Soak it with sugar syrup and desired aromas or liqueurs. Spread a layer of cream and level it well. Add the second piece of sponge cake,

  • soak it, then cover with a layer of cream. Cover the sides. Clean the edges if needed

  • decorate with the remaining cream using a piping bag. To add some color, you can mix a bit of cocoa into the cream. Add decorations as desired.
