Red Pesto
A summer recipe that doesn’t require cooking and is ideal for dressing our pasta dishes, bruschetta, pinwheels, savory pies, etc… The red pesto is made in just a few minutes by blending together sun-dried tomatoes in oil, basil, almonds, parmesan, oil, and spices to taste. Personally, I really like this pesto because when I don’t know what to cook or have little time, I make a fresh pasta dish, especially in the summer when it’s very hot!

Ingredients for red pesto:
- 7 oz sun-dried tomatoes in oil
- 3.5 oz almonds
- salt
- 1.75 oz parmesan
- 0.42 cup extra virgin olive oil
- basil
Steps

Place the sun-dried tomatoes, oil, peeled almonds, grated parmesan, washed and dried basil, salt, and blend everything for a few minutes until you get a smooth cream. If it still seems too thick, add a little more oil. Put the mixture obtained in sterilized airtight jars.
If we don’t consume it immediately, we cover it with the oil from the tomatoes or extra virgin olive oil. Store in the refrigerator until ready to use.
