Ricotta and Amaretto Cake

A delicious cake made with an amaretto syrup and a luscious cream made with ricotta, cream, and egg yolks! A dessert perfect for the end of a meal or a tasty snack, you choose the best time to enjoy a slice of cake. It’s also a great gift to bring to friends and family if you’re going to lunch or dinner! A very simple recipe to prepare, and if you don’t have or don’t feel like making the sponge cake, you can easily substitute it with ladyfingers, and you’ll be done even faster.

Ingredients for the preparation of Ricotta and Amaretto Cake:

  • 1/2 cup sugar
  • 2 tbsp water
  • 1.8 oz pasteurized egg yolks
  • 9 oz ricotta
  • 0.35 oz gelatin sheets (5 sheets)
  • salt
  • 3/4 cup heavy whipping cream
  • chocolate chips
  • 1 sponge cake (Disk)
  • 1.4 tbsp amaretto (liqueur)
  • 1/3 cup sugar syrup

Steps

Preparing the ricotta and amaretto cake is very simple, watch the video HERE.

  • Start by putting the sugar and water on the stove and let it dissolve; it should reach a temperature of 230-250°F. Once it reaches the temperature, add the egg yolks and a pinch of salt.

  • Gradually pour the prepared syrup over the egg yolks and mix. We need to obtain a light and creamy mixture. Meanwhile, soak the gelatin in cold water, then dissolve it on the stove with a bit of water.

  • Add it over the whipped egg yolks. Add the ricotta and cream, and mix slightly. Combine the liqueur and syrup.

  • Cut a sponge cake disk to the size of the mold (mine is 8 inches) and divide it into two equal parts. Place the first disk, and for a more precise result, use an adjustable cake ring and acetate sheet.

  • Soak the sponge cake and add about half of the prepared cream. Place the second sponge cake disk on top and soak it.

  • Place the second sponge cake disk on top, soak it, and cover with the remaining half of the cream. Add chocolate chips on top to taste. Refrigerate for a few hours.

  • Enjoy your meal!
