Ricotta and Blackberry Squares
A delicious dessert made with fresh ricotta, eggs, sugar, blackberries, and very little flour. Desserts with ricotta are always a hit with everyone, but especially with me 😂 since some time ago I made these simple squares and I really liked them, I decided to remake them but this time adding fresh fruit, and I chose blackberries! If you don’t like blackberries, you can choose any other type of fruit you like! If you enjoy the ricotta and blackberry combination, also try the Blackberry Cake with Ricotta and Lemon! I also recommend checking out the Blackberry Jam.

Ingredients for the Ricotta and Blackberry Squares:
- 17.6 oz ricotta
- 3 eggs
- 4 oz oz sugar
- 1/2 cup cup flour
- lemon zest
- 7 oz oz blackberries
Steps
The preparation of the Ricotta and Blackberry Squares is very simple, watch the video HERE.
Put the eggs, some grated lemon zest, and sugar, and lightly beat with an electric mixer (don’t whip them). Add the ricotta and mix.
Add the flour little by little while mixing (I use the mixer on low speed while adding the flour). Add the pre-washed blackberries and mix well.
Put the mixture into a mold of your choice (you can also choose a round mold of 8-9 inches and make a cake instead of squares). Level it and bake at 356°F for about 40 minutes.
Enjoy your meal!
