Ricotta and Lemon Zuccotto Without Baking

Ingredients for the Ricotta and Lemon Zuccotto Without Baking:
(9-inch mold)
- 7 oz sugar
- 10.5 oz ladyfingers
- 2 1/8 cups whipping cream
- 1.1 lbs ricotta
- 10 gelatin sheets (5 sheets)
- lemon flavoring
- lemon zest
- lemon juice
- sugar
- water
- lemon flavoring

First, soak the gelatin in cold water for about 10 minutes. Prepare the cream. Put the ricotta, cream, and lemon flavoring.
Add some lemon zest, sugar, and whip. Melt the gelatin by putting it on the stove with a little water, let it cool slightly then add it.
Preparation of soaking syrup:
In a container, put the lemon juice, flavoring, water, and sugar and mix. Soak the ladyfingers and place them in the mold lined with food wrap.
Add a layer of cream, a layer of unsoaked ladyfingers, another layer of cream, another of ladyfingers.
Add another layer of cream (reserve some cream for decoration) and cover with another layer of ladyfingers. Cover with film.
Refrigerate for a few hours. After a few hours, remove from the mold, cover with the remaining cream, and decorate as desired!
