ricotta brioche buns
Soft clouds filled with an enveloping ricotta cream flavored with vanilla and rum. A simple recipe that we can easily prepare in our kitchen with few simple ingredients that everyone has available. For this recipe I was inspired by a typical Romanian recipe “plăcinte poale-n-brâu” that my grandmother always prepared. To this day I don’t remember the recipe well and since my grandmother is no longer with us, I had to modify it a bit.

Ingredients for ricotta brioche buns:
- 3 1/4 cups all-purpose flour
- 3 1/2 tbsp butter
- salt
- 1/3 cup milk
- 1/4 cup sugar
- 4 tbsp egg yolks
- 1 container plain yogurt
- 1/2 tbsp fresh yeast
- vanilla
- 1 1/4 cup ricotta
- 4 tbsp egg yolks
- 1/2 cup sugar
- 3 tbsp semolina
- lemon zest
- rum flavoring

Put the flour, a pinch of salt, sugar, egg yolks, yogurt, milk, crumbled yeast,
the vanilla, and knead on low speed for about 15 min. When the dough pulls away from the sides, add the cold butter in pieces and continue to knead until fully incorporated. Transfer to a container, cover and let it rise until doubled in volume.
Filling preparation:
In a bowl, put the ricotta, egg yolks, sugar, lemon zest, rum flavoring, vanilla and mix. Add the semolina (adjust the amount based on the consistency).
Assembly:
After a few hours, take the dough and roll out about a quarter at a time. Roll out a square and cut it into 4,
put a little filling on each piece then close first the 4 corners then the other 4 (watch video). Continue like this with all of them.
Finally, brush them with a little beaten egg. Bake at 350°F for about 25/30 minutes.
