Roasted Pumpkin
A side dish perfect for accompanying any type of main course and more, we can serve it even in appetizers along with pickles or on a slice of toasted bread, in short, roasted pumpkin goes well with everything ☺️. A very simple recipe that takes just a few minutes to prepare and indeed uses pumpkin as the main ingredient and can be enriched with some spices!

- pumpkin
- salt
- extra virgin olive oil
- vinegar
- parsley
- garlic
Steps
The preparation of roasted pumpkin is very simple and quick, watch the video HERE.
First, we need to clean the pumpkin by removing the skin and then slice it very thinly (I used a mandoline slicer). Place the slices on the grill and cook them for a few minutes, flipping them on both sides.
Once ready, remove them and continue with the others in the same way. In the meantime, in a bowl, add some oil, vinegar, salt,
garlic, parsley and mix well. Pour the obtained sauce over the cooked pumpkin and let it marinate for a few minutes in the fridge!
