Salmon and Shrimp Crepes

A delicious first course perfect to include in our menu for Christmas Eve, Christmas lunch, New Year’s Eve or any lunch/dinner where we want to make something more special. I chose to make a version without eggs so that it can also be eaten by those who are allergic or intolerant. For the filling, I made a mix between ricotta, salmon, shrimp, and various spices, but if you prefer you can also use only salmon or only shrimp! Salmon and Shrimp Crepes are prepared very simply and in a short time! If you want to complete the menu, I recommend as a second course the Fried fish and as an appetizer the Gratinated Scampi!

Ingredients for Salmon and Shrimp Crepes:

  • 1 1/2 cups milk
  • salt
  • 1 2/3 cups flour
  • vegetable oil
  • 1 cup cup ricotta
  • parsley
  • 3.5 oz salmon
  • 2 tbsps milk
  • 3.5 oz shrimp
  • salt
  • nutmeg

Steps

The preparation of the Salmon and Shrimp Crepes is very simple, watch the video HERE.

  • Crepe preparation:

    In a bowl, put the flour, a pinch of salt, add the milk gradually and mix well. Brush the pan with oil and pour a bit of the mixture, spreading it over the entire surface.

  • Cook for a few minutes on all sides. Continue until the mixture is used up.

    Filling preparation:

    In a bowl, mix the ricotta, a bit of parsley, nutmeg, salt, milk, and mix well.

  • Assembly:

    Put a bit of the filling on a crepe. Add pieces of salmon, shrimp, and close it.

  • Place it in a baking dish. Continue this way with all crepes. Add a bit more milk to the remaining filling and pour it over the crepes.

  • Add a bit of salmon, shrimp, some Parmesan cheese, and parsley. Bake at 350°F for about 30 minutes.

  • Enjoy your meal!
