Ingredients

22/24cm pan

  • 2 1/2 cups flour
  • 1/2 cup butter
  • 2 eggs
  • 1 tsp instant yeast for savory preparations

  • 1 1/4 cups ricotta
  • 2 eggs
  • 3 1/2 oz salami (To taste)

  • Prepare the crumbled dough
    In a large bowl, work the cold butter cut into pieces with the flour using your hands, until you get a sandy mixture. Add the eggs, yeast, and a pinch of salt, continuing to work until you form a crumbly and grainy dough, not compact.

  • In another bowl, combine the ricotta with the eggs, a pinch of salt, and spices to taste (like pepper, nutmeg, or herbs). Mix until you get a homogeneous cream.
    Line a 9 to 9.5-inch pan with parchment paper and distribute about three-quarters of the crumbled dough on the bottom, pressing slightly.

  • Pour the ricotta filling on top, add the sliced cold cuts, and cover with the remaining crumbled dough, distributing it evenly.
    Bake in a preheated static oven at 350°F for about 40/50 minutes, until the surface is golden and crispy.

  • Let it cool slightly before serving: the savory crumble with ricotta and cold cuts will be crumbly on the outside and creamy on the inside, perfect for any occasion!


Tips & Storage:

For a bolder taste, you can enrich the filling with flavorful cheeses like smoked scamorza, provola, or parmesan.
